आली हे जमिनीखाली मुळीच्या स्वरूपात वाढणारी वनस्पती आहेत खोड जाडसर असते आणि त्याला गाठी सारखे प्रकार असतात आल्याची पाने तोडली किंवा कापली तर त्यांना एक खास वास येतो वरची पाने वाळवल्यानंतर जमिनीखालचे आले काढले जातात आले उन्हामध्ये चांगले वाळवले की त्याची सुंठ तयार करता येते.

Ginger Garlic संस्कृत आणि चिनी साहित्यामध्ये आल्यासंबंधी अनेक उल्लेख आढळून येतात संस्कृत मधील सिगबेर या नावावरून गरीब भाषेत जिंजी बेरी आणि लॅटिन भाषेत जिंजीबियन असे शब्द तयार झालेले आहेत.

आल्याचे मूळ स्थान भारतीय असून पहिल्यांदा त्याचा प्रसार चीनमध्ये झाला दोन्ही देशांमध्ये औषध आणि मसाला म्हणून आल्याचा उपयोग पूर्वीपासून करीत आले आहेत पहिले शतकापासून आल्याचा प्रसार युरोपमध्ये झाला आहे 100 ग्रॅम ताज्या आल्यांमध्ये आद्रता ८०.९ टक्के प्रथिने २.३ टक्के स्निग्ध पदार्थ झिरो पॉईंट नऊ टक्के इतके असते.

आल्यातील घटकांचे प्रमाण आल्याच्या प्रकारानुसार प्रदेशानुसार हवामानानुसार मशागतीनुसार वाढवण्याच्या पद्धती व साठवणुकीत आणि पॅकिंग बदलत असतात भारतामध्ये आल्याचे 26 प्रकार असतात.

औषधी गुणधर्म:

Ginger Garlic भारतात आणि इतर देशांमध्ये आल्याचा औषध म्हणून मोठ्या प्रमाणात उपयोग केला जातो पोटातील वायूचा गॅस नाश करण्यासाठी आल्याचा उपयोग होतो स्नायूमध्ये वेदना होत असेल तर त्या भागावर आले बाहेरून लावला लावल्यास आराम मिळतो इतर मसाल्याच्या पदार्थांमध्ये आले सुद्धा काम होते जग आहेत.

पचन विकार:

Ginger Garlic अपचन पोटात गुबारा धरणे पोट फुगणे आणि इतर पचन विकार यावर आले अत्यंत गुणकारी आहेत पचन विकार होऊ नयेत म्हणून जेवण झाल्यावर रोज आल्याचा तुकडा चावून खावा त्यामुळे तोंडामध्ये चांगली लाल सुटते आणि डाव्या स्टेज नावाचा पाचक रस भाजलेला मदत होते.

खोकला आणि सर्दी:

खोकला असेल तर आल्याचा रस माझा सोबत दिवसांतून तीन ते चार वेळा घ्यावा सर्दी असेल तर आल्याचे तुकडे टाकून पाणी उकळावे ते गाळून घेतल्यानंतर त्यात साखर टाकून ते गरम असतानाच प्यावे आले टाकून केलेल्या चहा ने सुद्धा सर्दी बरी होते.

नपुसकत्व:

आल्याचा रस कामोठे जग आहे अर्धा चमचा आल्याचा रस मध आणि अर्धवट उघडलेले अंडे रोज रात्री झोपताना महिनाभर घ्यावे त्यामुळे लैंगिक अवयवांना बळ मिळते नपुसकत्व दूर होते संमुख पूर्व विहिरी सकलन होत नाही स्वप्न अवस्था व लघवीतून धातू जाणे हे दोष दूर होतात.

वेदना आणि दुखणे:

आले वेदनाशामक आहे डोके दुखत असेल तर आले पाण्यामध्ये वाटून त्याचा लेप कपाळावर लावा याने दाढ दुखणे थांबते कान दुखत असेल तर आल्याचा रस त्याचे काही थेंब कानात टाकावे:

आले आणि सुंठ असे आल्याचे दोन प्रकार आहेत दोन्ही गुणकारी आहेत खाण्याच्या अनेक पदार्थांमध्ये आले लागतात जसे की पाव बिस्कीट केक पुडिंग लोणची यामध्ये आले टाका आमटीच्या मसाल्यात आले असते चिनी स्वयंपाकात आले मोठ्या प्रमाणात वापरले जाते आल्याचे तेल सुगंधी द्रव्यात आणि औषधातही खूप मोठ्या प्रमाणात वापरले जाते.
